Black-eyed beans
Scientific name: Fríjol Castilla or Caupí (Vigna unguiculata)
Characteristics: It is also known as “Fríjol Ojo Negro”, because it has a black spot in the middle. It is produced in northern Peru, from Piura to Huacho. An even size is important for the product to be exported. Black-eyed peas are frequently “red” stained by the rainfalls and these are not considered good quality peas.

- Harvest: In November, in large quantities, and in April, in smaller quantities.
