Scientific name: Amaranthus caudatus Linnaeus 
      Characteristics: Export amaranth is the variety known as "Oscar  Blanco", which is cultivated in Cusco.  It is whiter than the Mantaro  variety and has few black grains.  The Mantaro variety is darker, black  grained, and somewhat yellowish and crystalline.
